GOURMET SPINACH SALAD

2 tsp. fresh lemon juice
1 tsp. extra virgin olive oil
2 T. white wine vinegar 
4 c. cleaned spinach leaves
1-2 ripe tomatoes, chopped
1/4 c. goat cheese, crumbled
1 T. pine nuts, toasted for 5 minutes at 400 degrees 
bacon bits if desired, but just a few
salt & pepper to taste

In a large, bowl whisk together lemon juice, oil and vinegar, adding a pinch of salt and pepper.

Add spinach leaves and toss to coat evenly with dressing. 

Add the tomatoes and goat cheese, mixing gently.

Sprinkle pine nuts and a few bacon bits on top and enjoy this healthy and delicious salad!
