Broccoli and Leek Soup

RECIPES FROM OUR READERS - Here is a great soup recipe that is low fat AND that we can get the kids to eat...

Ingredients:

1 head of broccoli, chopped into 1 inch pieces (with tough parts of stems removed)
1 bunch of leeks, cleaned and sliced
1 large granny smith apple, cored, peeled and cut into 1 inch pieces
1 medium yellow onion, sliced
5-6 c. chicken or vegetable broth
1 T. olive oil or butter

Directions:

Cook onion in oil/butter until onion is tender. Add leeks and broccoli and saute until leeks are tender. Add broth and granny apple. Cook until broccoli is soft. Remove from heat and cool. Run through a blender to puree, leaving texture as desired. Reheat and serve. I like to serve this soup with parmesan cheese but it is not necessary.
