Potato Skins

4 large potatoes
2 T. margarine, melted
1/2 tsp. salt
1 c. shredded med. or sharp cheddar cheese
Bacon bits, or the real stuff cooked, drained and crumbled
Sour cream (lite or fat free is fine)
Prick potatoes with fork and bake at 425 degrees for 1 hour. Cool 5-10 minutes.
Cut potatoes lengthwise, scoop out insides being careful to leave 1/3" in shell. Spread insides and outsides of shell with melted margarine and then sprinkle with salt.
Sprinkle potato skins with shredded cheese and bacon, broil for about 2 minutes until cheese is melted and slightly browned.
Top with sour cream and chives if desired.
