Seasoned Green Beans and Quick Butter Biscuits

There are lots of ways to season green beans (adding cut up onions, bacon bits, or a TBS. of bacon drippings just to name a few), but this one is my favorite.  My step-mom, born and raised in Alabama, was staying with us after the birth of one of our children and made this dish for us.  I couldn't believe how easy it was, how good it tasted, and why I had never thought of it! ;o) 

I learned how to make the butter biscuits when I saw them being prepared in assembly line style at our church in Tennessee (for the 'meals on wheels' program).

 

*Seasoned Green Beans*

Cut up a few slices of bacon, into 1 - 2" pieces. Meanwhile heat a medium size saucepan up just a bit.  Drop the bacon in (it will sizzle and cook fast if you've heated the pan), and cook until almost crispy, stirring the bacon around so the pieces won't stick to the pan.  Then add in 2 cans of green beans (drain and add fresh water) and bring to a boil. Cover and simmer for 30 minutes to an hour.  Delicious!

*Butter Biscuits*

Melt some butter, about ¼ - ½ c. for a package of refrigerated biscuits.  Then dip each individual biscuit into the butter, rolling it around to cover all sides.  Bake as you normally would, and enjoy the best biscuits you've ever had, almost as good as Hardee's!

 

The meals on wheels volunteers were using the frozen type rolls found in large plastic bags in your frozen food section.  They would dip the rolls around in the butter and then set them out on trays to be baked... dozens of trays all at once! I thought this information would be helpful in case you ever have a large group to prepare for too.
